comes very sharp.(unlike some other manufacturers)I just used mine on a whole pork shoulder with skin on bones in.Reduced to several pieces in no time at all.Sliced through skin,around bones like a razor.I did manage to stab one finger.Goes to show,you will always get cut when in a hurry.The handle is long enough and grippy enough when wet and covered in pig meat juices.(I hate a short blade knife with a handle that does not fit the hand,I have several of those) This is a great little knife for taking apart large pieces of meat with bones in .Dont dull the edge by using it on other materials.
